1/2 cup uncooked lentils
1/2 package tofu
1 medium onion
4 tbs olive oil
cook the rice and lentils together according to their directions (as in, start cooking the rice before adding the lentils). halfway through, chop and add half the onion. meanwhile, in a frying pan with the oil, fry the other half of the onion (chopped) with the tofu, cut into cubes. when the tofu is golden brown, dump in the rice and lentils. fry together stirring constantly for about 5 minutes. eat.
boyfriend approved (in fact, he created this recipe!).
