No-Added-Sugar Apple Pie

Crust:
2 1/2 C flour
2 sticks of (salted) butter
Ice water

Filling:
6 C thinly sliced apples (I used golden delicious)
Cinnamon

Stick the butter in the freezer for about half an hour or longer. The crust will not turn out as well if the butter is not really really cold. Once the butter is cold, cut it up into chunks to make it easier to work with. Put it in the flour and use your hands to push the flour into the butter and mush it all up until you have little pea-sized globbs of butter in the flour. Add ice water (or, really, just cold cold cold water) by the tablespoon until the dough starts to stick together. Split the dough in half. Stick one half in the refrigerator, and press the other half into a pie pan (or, I used a casserole dish!). Once it's pressed in, dump in the sliced apples. You can either mix the cinnamon around with them beforehand, or you can just dump cinnamon on top- however much cinnamon you want. Take the other half of the dough out of the refrigerator and roll it out flat. Use flour to keep the dough from sticking to the counter, table, whatever you're rolling it on. Roll it just big enough to go over the top of the pie, and then pick it up and put it on top of the pie. Press the edges of the dough together, then cut a few slits on top of the pie to vent it. Bake at 475 for 10 minutes, then reduce heat to 375 and bake for 35-40 minutes, or until crust is flakey and golden.

Apples are naturally sweet and contain fruit sugar, so this is not a sugar-free food! Still be careful if you are sugar-sensitive/diabetic/on-a-diet.

Falafel Sammy

Ingredients:
  1. Box of falafel mix
  2. Oil
  3. Block of mozzarella cheese
  4. Bread
  5. Tomato
  6. Cucumber
Hi!!

Here is the idea.

Mix the falafel mix with water. (The ratio for our box was 4 parts mix, 3 parts water.) Let sit 1/2 hour. This makes it firm (relatively). Then, you're supposed to deep fry it in a few inches of oil (usually making little spheres). We fried it in about 1/2 inch, turning it into regular sandwich-size patties. We sliced the tomato, cucumber, and cheese to put on the sandwiches. It was good.

tofu avocado cream cheese and tomato sandwich

Tastes just like it sounds!

1/2 avocado
1/2 package of tofu
1/2 tomato
3 tbs cream cheese
2 slices of bread - whole wheat is good
oil for frying

Fry tofu in frying pan until it's golden brown on each side. Meanwhile, mash avocado and remove pit and peel. Spread this on one slice of bread. Spread cream cheese on the other slice. Slice the tomato and place on bread. When the tofu is done, place that on top of the tomato. Form a sandwich. Eat.

Delicious and boyfriend approved.

rice and beans and other stuff

Beans:

8 cups of water
1/2 pound of black-eyed-peas
1 cup of rice
1 carrot, sliced
1/2 large onion, chopped
1 avocado, cut up in little pieces however you like
2 tsp garlic powder
2 tsp dried parsley
2 tsp dried basil
salt, to taste

Prepare beans by soaking or quick soaking, or use 2 cans (use less water if using canned beans)
Simmer beans for 30 minutes, covered. Add rice, onion, carrot, garlic, parsley, basil. Cook, covered, for another 20 minutes or however long it takes to get the rice done. Turn off heat. Add avocado and salt.

Homemade corn chips

i used this recipe:

corn tortillas
oil
salt

Cut up tortillas. Fry in frying pan. Dry on paper towels. Salt, to taste.

I find it delicious. Dunno if boyfriend likes it, he hasn't tried it yet.

Whatever Is In The Kitchen Soup

Use a really big pot. This recipe is large.

6 or 7 cups of water (not sure exactly how much i used, but somewhere around there)
1 cup of rice (i used white)
1 long carrot
2 celery stalks
1/2 cup lentils
1/2 onion
4 cloves of garlic
1 can of corn
1 can of red beans
1 can of pureed peas
2 tbs parsley flakes
2 tbs oregano
1 potato
2 bay leaves (don't actually eat the bay leaves)
2 tbs basil
salt to taste
saltine crackers - optional

Use a really big pot. Really! Add water, rice, carrot, celery, lentils, onion, garlic, potato, and herbs. Bring to a boil. Then turn the heat down and simmer uncovered for 30 minutes. Add corn, beans, and pea puree. Simmer for another 5 minutes. Remove heat.

Eat.

Experimental Tea

I wanted some tea, but i was bored with plain ol' black or green tea. So i mixed:

3 Tbs "midwife" tea (raspberry leaves, comfrey, nettles, alfalfa)
1 tsp cinnamon
2 tsp cloves

and poured boiling water over it and let it sit for about 15 minutes. Then i tried some. It was the nastiest bitterest tea i've ever tasted. It tasted like i accidentally dumped onion powder in it or something. So i added:

1/4 cup milk
4 Tbs cinnamon-sugar

stirred it up and tried it again. Still very nasty and bitter. Do not try this recipe at home. You will be disappointed.

Corn Walnut Pancakes

3/4 cup flour
3/4 tsp baking powder
1/2 tbs brown sugar
1 1/2 tbs vegetable oil
1/4 tsp salt
1 egg
3/4 cup milk
1 cup chopped walnuts
1 can (11oz) corn

Mix flour, powder, sugar, oil, salt, egg, and milk. Mix in walnuts and corn.

Pour 1/2 cup of batter in frying pan, use the scoop to flatten, and cook on medium heat until bubbles form and edges begin to brown. Flip. Continue cooking for 3-4 more minutes. Remove from pan. Repeat.
