Beans:
8 cups of water
1/2 pound of black-eyed-peas
1 cup of rice
1 carrot, sliced
1/2 large onion, chopped
1 avocado, cut up in little pieces however you like
2 tsp garlic powder
2 tsp dried parsley
2 tsp dried basil
salt, to taste
Prepare beans by soaking or quick soaking, or use 2 cans (use less water if using canned beans)
Simmer beans for 30 minutes, covered. Add rice, onion, carrot, garlic, parsley, basil. Cook, covered, for another 20 minutes or however long it takes to get the rice done. Turn off heat. Add avocado and salt.
Homemade corn chips
i used this recipe:
corn tortillas
oil
salt
Cut up tortillas. Fry in frying pan. Dry on paper towels. Salt, to taste.
I find it delicious. Dunno if boyfriend likes it, he hasn't tried it yet.
